In Liptov, try above all the sheep's cheeses: bryndza, oštiepok, parenica and žinčica, and among the dishes bryndzové halušky and the bryndza spread that Austrians know as Liptauer. Since 2008 Slovenská bryndza has had EU protected geographical indication status and must contain more than 50% sheep's cheese. The surest way is to buy the cheeses straight from a sheep farm (salaš), for example Salaš Krajinka near Ružomberok.

Why bryndza
Liptov is a land of mountains and meadows, and for centuries they were ideal for keeping sheep. Besides wool, the sheep farms (salaše) produced above all milk and made cheese, and a folklore and dress of their own grew up around them. At the head of each farm stood the head shepherd (bača), helped by other shepherds.
Bryndza is made from sheep’s cheese. The first bryndza dairy in Slovakia was founded in Detva in 1787 by Ján Vagač, who was looking for a way to keep sheep’s cheese for longer. Bryndza then became a trade commodity and travelled from Liptov all the way to Vienna. That is also where the German name Liptauer comes from, which we write about below.
When you sit by Liptovská Mara in the evening, you are right in the middle of this region. One of the sheep farms recommended by Slovakia.travel stands right on its shore.
What Slovenská bryndza on the packaging means
Since 2008 Slovenská bryndza has had European Union protected geographical indication status. It was registered by Commission Regulation No 676/2008, published in the Official Journal on 16 July 2008. Protection was requested by the Bryndza Makers’ Guild (Cech bryndziarov).
According to the specification:
- Slovenská bryndza is a naturally white, smoothly spreadable ripened cheese.
- It is made in the traditional way by grinding ripened sheep’s lump cheese, or a mixture of it with cow’s cheese.
- It must contain more than 50% sheep’s cheese.
So in the shop, look at the packaging. Not all bryndza is Slovenská bryndza. Bryndza without this label may contain more cow’s cheese.
Bryndzové halušky and Liptauer
Bryndzové halušky are potato dumplings mixed with bryndza and topped with fried bacon. If you want to try them properly, order them somewhere that uses bryndza from its own sheep farm.
Bryndza spread is called Liptauer, Liptauer Käse or Liptauer Aufstrich in German. The name comes from the German name for Liptov, Liptau. It probably first meant pure bryndza brought to Vienna from Liptov. After the break-up of Austria-Hungary, Slovak bryndza disappeared from the Austrian market and the Viennese replaced it in the recipe with cow’s curd cheese.
Slovak bryndza spread contains bryndza, chopped onion, ground paprika and butter. It should be orange and slightly spicy. It tastes best on fresh bread, for example after a whole day cycling around Mara.
Oštiepok, parenica and korbáčiky
- Oštiepok: a smoked cheese shaped in wooden moulds with a carved pattern. Slovenský oštiepok was the fourth Slovak product entered in the EU register.
- Parenica: a steamed cheese rolled into a snail shape, often smoked. Slovenská parenica also has protected geographical indication status.
- Korbáčiky: cheese strings braided into plaits. They are not from Liptov but from Orava. Both Oravský korbáčik and Zázrivský korbáčik have protected status. Orava is just over the hill from Ružomberok.
- Žinčica: a sour drink left over from cheese making. You either love it or you don’t, but you have to try it.
Children like the nite cheese strings and korbáčiky best; oštiepok has a stronger taste. For the journey home it is worth buying a whole oštiepok, which keeps longer than fresh cheese.
Where to buy cheese: sheep farms
The surest way is to go straight to a sheep farm. Where our host Kamil goes to eat, you will find in our guide to Liptovský Mikuláš.
Salaš Krajinka near Ružomberok is a family-run sheep farm, founded in 1983 to keep 1,000 sheep. They process the sheep’s milk by hand in the traditional way and sell sheep’s cheese, bryndza, oštiepok, nite cheese strings, žinčica and butter. The restaurant looks straight into the sheep shed and cooks traditional Slovak dishes from its own produce. It is a good stop after a trip to Malinô Brdo or Vlkolínec.
In its article on the sheep farms of Liptov, the official portal Slovakia.travel also mentions other places:
- the Bobrovník salaš on the shore of Liptovská Mara,
- Lúžňanský salaš in Liptovská Lúžna,
- the Gejdák agrofarm above Ružomberok,
- Pastiersky salaš in the Bobrovecká valley.

Bryndza festivals
By tradition, the sheep-farming season ends on the feast of St Demetrius (Mitro), 26 October. To mark it, Liptovský Mikuláš holds the Liptov Bryndza Festival (Slávnosti liptovskej bryndze). In past years it featured a shepherds’ procession, folk groups, bryndza-making demonstrations with tastings, sheep herding with Slovak Chuvach sheepdogs, a craft market and mutton goulash from a big cauldron. In 2026 it was on Sunday 25 October from 11:00 to 17:00 on Námestie osloboditeľov, admission was free, and at 14:30 there was a bryndza-making demonstration with a tasting. You will find more events in the area in our guide to events in Liptov.
Ružomberok holds Liptov Bryndza Day (Deň liptovskej bryndze) on Námestie A. Hlinku. In 2026 it was on Sunday 7 June.
What to combine it with
If you go to the festival, combine it with a walk around Liptovský Mikuláš. We have more autumn tips in our guide to Liptov in autumn. And if you would rather prepare the cheeses yourself, our log cabin has a garden with a barbecue and a fireplace, where oštiepok tastes best.
